How To Make One Pot Spanish Chicken And Rice

  1. Preheat the oven: To 400 F degrees.
  2. Brown the chicken: In a large Dutch oven or oven proof cast iron skillet/pan heat the olive oil over medium heat. Add the chicken thighs, skin side down and cook until crispy and golden brown and season generously with salt and pepper. Turn the thighs over and sear until golden. Transfer the thighs onto a plate and set aside.
  3. Saute the sauteables: To the same skillet add the onion, garlic and bell peppers. Cook for about 3 to 5 minutes until the onion and peppers are soft. Add the red pepper flakes, smoked paprika, bay leaf, tomato paste and stir.
  4. Cook the dish: Season with salt and pepper as needed. Stir in the rice, crushed tomatoes and chicken broth and bring to a boil. Transfer the chicken back to the skillet on top of the rice then place the skillet in the oven and bake for about 45 minutes or until the rice is cooked through.
  5. Optional: You could cover the skillet for the first 30 minutes and then remove the lid for the last 15 minutes.
  6. Finish the dish: Garnish with green olives and parsley and serve warm.

  • Diced Tomatoes: we used fire roasted diced tomatoes, but you can also use Rotel or regular canned diced tomatoes.

Best Spanish Chicken and Rice Recipes - Classic Spanish Chicken and Rice

For this dish you'll need: 4 frozen boneless chicken breasts, 1 box of Mexican rice, 1 tablespoon of olive oil, 2 1/4 cups water, 1/2 cup red bell pepper, 1/2 cup frozen peas - thawed, 1/3 cup of stuffed Spanish olives - cut into halves.

Run chicken breasts under cool water to rinse off ice crystals. Hold under water for about 1 to 2 minutes.

In a large skillet pan, heat 1 tablespoon of olive oil up. Add in the chicken breasts and cook over medium high heat for 10 to 15 minutes, or until chicken is a light brown color.

Cover the pan and reduce the heat to simmer. Simmer the chicken and rice for 10 minutes, or until chicken juices run clear. Remove pan from heat.

Let the dish sit in the pan for about five minutes with the cover on, until the liquid is absorbed. Serve with corn or mixed vegetables.

To make this dish you'll need: 4 medium zucchini - sliced, chopped onion, 4 cloves garlic - minced, dried oregano, a jar of salsa and shredded mozzarella cheese.

Take a large nonstick skillet and coat with nonstick cooking spray and heat over medium heat until nice and hot.

Add in the sliced zucchini and cook, stirring constantly, for 5 minutes. Add in 1/3 cup of chopped onion, the minced garlic and 1/4 teaspoon dried oregano. Cook for another 5 minutes or until the zucchini and onion are lightly browned.

Stir in 1/2 cup of salsa. Bring mixture to a boil and then reduce heat to low. Simmer for an additional 5 minutes or until the zucchini is tender-crisp. Sprinkle 1/4 cup of mozzarella cheese over zucchini and cook for 1 or 2 minutes or until the cheese is melted. Serve hot.

You can make a big deal out of chicken with rice -- at its zenith, it becomes paella -- but it is a dish that takes well to short cuts. And even at its simplest, it's a crowd-pleaser.

For fast weeknight meals, I strip chicken and rice to its essentials: oil, onion, chicken and rice. Stock makes the best cooking liquid, but water works almost as well, because as it simmers with the chicken they combine to produce a flavorful broth. To reduce greasiness, I remove the skin from the chicken before cooking it. (In a moist dish like this one, the skin is not especially appetizing anyway.)

You can easily vary this dish by using any stock instead of water by substituting another grain, like pearled barley, for the rice by sautéing or roasting the chicken separately and combining it with the rice at the last minute by adding sausage or shellfish, like shrimp, along with the chicken, or, most excitingly, by adding strips of red pepper, pitted olives, capers, chopped tomatoes or shelled peas to the initial onion mix.

I have made this recipe a few times. I have a co-worker that is Spanish and she says this dish is the real deal!! She loves it every time I bring it in! The only change I have really made is to cut the chicken into cubes, we find it easier to serve that way!

The first time I tried this recipe, the timing seemed accurate and the consistency of the rice turned out fine (using a Mexican variety of rice rather than Asian) however, something was definitely missing in the flavor category, especially as my husband and I really enjoy our food spicy. I decided to give it a second try this time, I added a bit of hot Mexican chili powder onto the chicken before I browned it. Also, I found a can of diced tomatoes that included onions and peppers, which increased those flavors. Then, as I poured in the wine, etc., I added about 1/3 of a packet of fajita seasoning and more chili powder. This definitely transformed the dish and made it much more enjoyable to eat! If you try any kind of Mexican/Spanish spices you like best, it should take this meal from pretty bland to flavorful in no time.
