Method of preparation

We peel the diced potatoes, wash them and boil them. Don't let them break. It is preferable to use red potatoes.


While the potatoes are boiling, cut the kaizer into cubes and fry it in a few tablespoons of oil until it becomes slightly crispy.


Add finely chopped onion and sauté until translucent.

Add the well drained potatoes, salt, pepper and paprika and mix gently so as not to crush the potatoes. Let it simmer for a few minutes until the potatoes are lightly browned. Sprinkle with green parsley.
It can be served as a garnish for various steaks but also as a kind of stand-alone.


How are these peasant potatoes made in the oven?

The potatoes are washed and peeled. If they are new potatoes, they are washed well with cold water and rubbed lightly with a sponge. It is not necessary to clean them of thin skin. Washed potatoes are sliced ​​into thin slices of approx. 0.5 cm.

What spices do we use for peasant potatoes?

It is clear that if we make peasant potatoes we have to put paprika (paprika), cumin and onion. That's in addition to salt and pepper. So, in a bowl, place the potatoes, spices and onion slices. Add about 3-4 tablespoons of oil and shake the bowl well so that the spices reach all sides of the potato. You can also use 1 tablespoon of homemade lard instead of oil. Choose a heat-resistant tray (metal, ceramic or Jena glass) and arrange the potatoes according to everyone's imagination. You can also flip them out of the bowl without creating a special pattern. I placed them nicely in a circle in a cast iron pan that I can put in the oven (it doesn't have a wooden or ebonite handle). I added a few more oregano leaves from my own herb garden.

Cream sauce obtained will be refrigerated until serving.

Potatoes fit in size, wash well with a sponge under cold running water, then dry with an absorbent kitchen towel.

How to make these baked potatoes with garlic and parmesan or garlic parmesan wedges?

What potatoes do we choose for baking?

Many people ask us which varieties of potatoes are suitable for baking, boiling, salad or puree. Lately there are quality potatoes packed in 2.5 kg nets, sorted by variety (eg in Kaufland). I had some yellow potatoes (said for baking) and some red ones (said for salads). I used them a lot and I wasn't wrong.

First I let them soak in cold water for about 10 minutes, then I rubbed them with a rougher kitchen sponge. Thus I removed the earth from their bark. Then I rinsed them thoroughly and wiped them well with a kitchen towel. It is not allowed to have wet shells! With the tip of a knife I removed the small black eyes (where appropriate).

I cut the potatoes lengthwise: first in halves and then in quarters or sixths (2 or 2 slices in each half & # 8211 like watermelon).

  • 2-3 tablespoons grape seed oil (may also be olive oil, but not even extra virgin)
  • 100 g Parmesan (also replaceable with Grana Padano or Pecorino Romano - depending on the region of Italy you want to represent)
  • Salt, mixed pepper - to taste.

How do you proceed?

The potatoes, washed with a sense of responsibility, are boiled in cold water (enough to cover them) in which a teaspoon of salt is added.

Boil the potatoes for about 3-4 minutes less than I boiled the ones in the picture below. That is, they must be penetrated, they must be easily penetrated with a fork, but they must not end up in the skin of pride. About 15 to 17 minutes of boiling I think would be enough, to the size they have. If they are bigger - more, if they are smaller - less.

Peel a squash, grate it and put it in a non-stick pan. Season with salt, pepper, oil and butter.

The smoked pork is cut into small pieces and thrown over the potatoes.

Mix everything well, then spread the resulting mixture, in an even layer, over the entire surface of the tray.

The tray with ingredients is placed in the preheated oven at 200 - 220 ˚C. After 15 minutes of baking, pass the spoon through the tray until it rolls on one side from one side to the other.

Put the tray in the same hot oven for another 15-20 minutes. The wonderful potatoes should start to turn golden. If they are stubborn, pass another spoon between them and give them about 2 minutes of flame from above, from the vault of the oven and they are good.

As long as you don't have work in the oven, grate the cheese. Cheese that you sprinkle over the freshly baked potatoes.

The vegan / fasting version of the dish is made in the same way. Only no butter, no shit. And parmesan is replaced with mozzarella. Vegetable mozzarella, obviously.

These "peasant potatoes" can be served as a main course, accompanied by a beetroot salad with horseradish. Or they can be used as a garnish. Next to a piece of lamb, for example, and with a glass of Grand Vin de Bordeaux next to it.
