In the kneading bowl, put the flour mixed with the salt and in the middle of it, make a hollow in which you add: the shredded yeast, the sugar, the melted butter and the eggs. Pour a little warm milk and mix the ingredients in the middle of the bowl, until both the sugar and the yeast dissolve. Then pour all the milk little by little and incorporate all the flour. Finally, to finalize the dough and peel it, add the oil and knead only as long as it is well absorbed in the texture of the dough.

When the dough becomes non-sticky and elastic, cover with a clean napkin and leave to rise in a warm place, away from drafts.

When the dough has doubled in volume, it is turned over on the floured plate and kneaded a little more, to release the air bubbles that inflated it. When the dough is firm, it is divided into two similar pieces, by weight, from which a small amount is retained for decoration (leaves and roses) and then two long rolls are made, which are placed on the cross-shaped board, one on top of the other. .

The weaving is started by bringing, on top of each other, the opposite ends of the two rolls: the upper end is lowered at the bottom, and the lower one is raised at the top. Then the right end goes to the left and vice versa. Continue like this, in the same order, until the weaving and the rolls are finished.

When the braid is ready, place it in the tray greased with butter beforehand and glue the ends underneath, carefully, so as not to spoil the appearance of the roll.

From the retained pieces of dough are made leaves and roses, both for beautification and to hide the place where the ends of the braid were glued. For roses, spread a thin sheet, cut with a teaspoon, overlap, 1 cm each of the slices obtained, then roll inwards and attach well to the base. After the roses are fixed on the coil, the petals of the roses unfold outwards.

For the leaves, stretch a long, thin strip of dough, cut it diagonally, fix the middle of the leaf, then cut the sides in a circle, and when it is fixed on the roll, stretch it a little from the ends, to give it a beautiful shape. (more pictures, in my recipes with rolls braided in 5, or 6).

Cover the roll with a clean napkin and let it rise for another 10 minutes, then grease it with an egg and sprinkle seeds.

Put the roll in the preheated oven, at medium temperature and leave it there (possibly changing its position, so that it bakes evenly) until it browns nicely. When well browned, take the cake out of the oven and leave it in the form until it cools down.

coils are typical Romanian products, with a round shape and different braids, having a special significance in the popular tradition and are found at the most important moments in the life of Christians: baptism, wedding, funeral, memorial service, etc.

The round shape means infinity and immortality, so if at the wedding and baptism the coil is a sign of joy, at the funeral and memorial the coil represents "the pair of the soul without which it cannot integrate among the people taken", having the meaning of a bridge to the world beyond.

Put the flour in a bowl and form a mound with a hollow in the middle. Heat 2 tablespoons of milk in a saucepan and add 1 teaspoon of sugar. Crush the yeast and mix until smooth.

Pour the yeast mixture into the bowl and cover with a little flour. Keep covered for about 20 minutes, until the surface of the flour cracks. Then add the rest of the milk and sugar, butter, salt and egg and mix well until the dough is smooth. Then knead vigorously for 10 minutes, until the dough no longer sticks to the bowl. Cover and leave to rise for 30 minutes.

Preheat the oven to 200 ° C (gas 3-4). Incorporate lemon peel, dried raisins and almonds into the dough. Divide the dough into three equal parts, roll into rolls and knit. Press the ends, then grease with melted butter and fold.

Let it rise for another 20 minutes. Grease with egg yolk and sprinkle with chopped almonds. Grease the baking tray with butter and bake the cake for about 1 hour. If it browns too quickly, cover it with aluminum foil.

curl (in Romanian), Etymology of the word "colac", at 'plural:' curl (kolachy) from (Greek) ϰόλλαξ and slavon kolač, from "kolo": "kolo" in Slavonic means "wheel" and refers to something circular in shape [1]. 'coilsthey are also called challah in the Jewish communities, Hefezopf in German, khale (in the Eastern Yiddish dialect, German and the Western Yiddish dialect), berches (in Swabian), barkis (in Gothenburg), bergis (in Stockholm), birkata in the Judeo-Amharic dialect, chalk (in Polish), vánočka (in Czech), zopf (in Switzerland) and Kitka (in South Africa), [2]

The word coil in the singular is mentioned in the Bible with Calah (times: Allah, in Hebrew חלה), first used in an order given by God to the children of Israel as when they enter the country before eating the bread of the earth to offer the first leavened meal, a cake Calah, as a lever of raised dough to untie them to eat from the bread of the earth from generation to generation. [3]

In Romania and more widely in the Balkans, there is an offer of cereals related to the cult of the dead. This is also the case of the cage, but also in Moldova of saints the holiday that takes place on March 9, when it is offered to visitors who come to remember those who are asleep waiting for the resurrection. In other parts of the country, children's carols are traditionally rewarded with apples, nuts and rolls [4].

  • 2 teaspoons salt
  • 20 g of fresh yeast
  • 200 ml of warm water
  • 2 tablespoons powdered sugar
  • 2 eggs
  • 75 g melted butter

Mix the yeast with the sugar until it liquefies.

Sift flour into a bowl and make a hole in the middle. Add salt, yeast, water, butter, eggs.

Knead for 10-15 minutes, gradually incorporating all the flour from the edges, and the dough becomes elastic and smooth. Place the dough in an oiled bowl, cover and leave to warm for about an hour.

4 recipes for a more sustainable 2030

The TIME 2030 project, created by the international publication Time is an initiative that highlights ideas and innovations designed to accelerate progress towards a more equitable and sustainable world. We therefore present below 4 of the main directions highlighted by experts.

1. Using technology to hold polluters accountable & # 8211 Ma Jun

The globalization of manufacturing has generated an unprecedented level of economic prosperity in some of the world's poorest countries. However, the implicit increase in poorly controlled emissions and bio-degradation has generated dangerous and unsustainable levels of air and water pollution, destabilizing the climate and threatening the planet's biodiversity.

Technological advancement has contributed to the creation of this cycle (of progress and then destruction), but the same technological advancement can help break the vicious circle. Automated environmental monitoring, electronic reporting and online information systems accessible today generate the possibility of imposing new standards of environmental responsibility. The technology allows the public to analyze the pollution problems of factories, but also allows the government to make more consistent regulatory efforts and companies to more rigorously monitor their supply chain. To check for industrial pollution, Chinese corporations have implemented automated online monitoring and reporting systems. Thus, the public has real-time access to emission data.

This type of innovation has a significant impact in China, a country considered the world's manufacturing plant. An interactive database Blue Map conducted by the Institute for Public and Environmental Policy combines public and private sector data to record water and air pollution and to monitor in real time other critical environmental data. Many factories have thus begun to report their own carbon levels. Hundreds of local and multinational corporations now use the database to monitor their suppliers and can receive notifications as soon as a breach or deviation occurs.

The application of digital solutions to environmental problems has led to increased responsibility and the possibility of prosecuting polluting actors who violate the rules of Chinese industrial pollution. More than 10,000 factories have already solved internal pollution problems, and more than 20,000 factories have chosen to participate in this improved surveillance program. China is increasingly informed and open to the issue of environmental data. This should give us hope that our digitally connected world can give us a cleaner industrial future.

2. Educated women will make the world greener & # 8211 Vanessa Nakate

When we think of the world's climate problems, we tend to think of renewable energy or electric cars. While we really need such innovations, there are other significant solutions that deserve more attention. There is an environmental solution that can reduce inequality, increase resilience to the climate crisis and, at the same time, reduce emission levels. This solution, which must be considered as soon as possible, is to educate girls and young people.

If we aim to limit global warming to 1.5 degrees Celsius above the pre-industrial level, then educating young girls is one of the best tools we have. Conformable Project Drawdown, emissions levels would be lower by up to 85 gigatonnes by 2050, if we now invest in an inclusive education system and family planning for households in developing countries.

Girls who went to school when they were little become strong women. They do not get married quickly and tend to have smaller and healthier families, while limiting emissions. Girls who have been to school know the tools of climate resilience and can own them. They are economically strong, are perceived as strong in their own communities and are aware of climate challenges.

They can become leaders. Women in leadership positions have always been more open to ratification of environmental treaties and agreements. Think of Christiana Figueres, the UN diplomat who led the negotiations for the Paris Agreement. Another example is Hilda Heine, the former president of the Marshall Islands, who showed the world what the impact of climate change is on the Pacific. We can also look at young women who set the tone for current climate movements. To educate a girl is to give her a bright future. To educate girls is to give the whole world a lifeline.

3. To fight climate change, fight for people & # 8211 Lisa P. Jackson

When I was 8, I wrote a letter to President Nixon asking him to do everything he could to protect our planet. I didn't know that I was going to run the agency he founded, the Environmental Protection Agency. I didn't even think I would be able to use the work there at Apple. I saw exactly the impact of pollution on my community, air and water contamination. I knew then, as I know now, that something needs to be done when people's health is at stake.

Concern for people should be at the heart of our concern for the environment. If we want to limit the most harmful effects of climate change, we must do so by facilitating discussions with the most affected communities. They need to be involved in discussions and wider collaboration. Equity must be the foundation of ecological progress. Apple already has carbon neutral emissions and the carbon footprint will reach zero by 2030 & # 8211 from the company's supply chain to the electricity needed to charge an iPhone. Moreover, we have maintained the principle of equity at the heart of ecological progress & # 8211 by collaborating with indigenous peoples in Colombia or launching initiatives that support renewable energy.

Climate change and global inequality are too big a problem to be solved by a single company. However, more and more people understand that for a healthy planet, a fair future is needed. It's the future I wanted when I was eight, when I wrote to President Nixon. It is the future we can build together.

4. It helps nature to restore its balance & # 8211 Paul Polman

Nature and climate are inherently interdependent. Nature's problems generate climate change and vice versa. At the moment, both are in full crisis. Restoring our natural climate & # 8211 reversing deforestation or conserving ecosystems for carbon storage & # 8211 solves the crisis. Such natural solutions are the cheapest and most important tools we have in order to maintain carbon-neutral emissions by 2050. Despite this, such solutions receive little attention and only 8% of public climate funds. This needs to change.

Natural and well-thought-out climate solutions have multiple benefits, including increased biodiversity, improved watersheds, better harvests and better climate resistance against global warming. Such solutions also address the problem of the poor and allow for inclusive growth. By 2030, natural solutions will generate over $ 10 trillion and 395 million jobs, making it a considerable opportunity. To accelerate progress, the private sector calls on governments to work together to develop policy boundaries that allow for bolder corporate action. This process must include redefining the growth model, precisely in order to enhance our financial and natural capital. Reversing the degradation of the planet is a crucial component of a better future. It 's not just a critical opportunity & # 8211 is our only option.

For the dough:
500 g flour
110 g sugar cough
200 ml of warm milk
115 g melted butter
25 g of yeast
2 yolks
1 pinch of salt
1 egg for greased
grated peel of 1 lemon

For the filling:
160 g ground walnuts
3 tablespoons cocoa
1 sachet of vanilla sugar
200 g melted chocolate & # 8211 I used nutella
50 g raisins

For the beginning we prepare the mayonnaise, as we did for all the cakes: in a cup we put the yeast, we add 1 spoon of sugar and one spoon of flour, we cover with milk, we mix a little with a teaspoon, then we leave it to ferment for about 10 minutes, until it stays to get out of the cup.

Meanwhile, rub the yolks with the sugar, then add the melted butter gradually. Put the mayo over the flour, then the egg mixture with butter, lemon peel, salt and milk a little, while kneading.

Knead the dough until it no longer sticks to your hands & # 8211 the more you knead it, the fluffier it is. Depending on the type of flour you use, sometimes we need to add 1-2 tablespoons of flour. The dough we get must be elastic, shiny. Sprinkle the flour over it, cover it with cling film directly on the dough, then let it rise in a warm place.

When the dough has risen, take it out on a plate, knead it a little more, then divide it into 3 equal parts that we will spread with a rolling pin.
Each part will be filled with something different: one grease it with melted chocolate then roll it, on the other side sprinkle a mixture of 110 g walnuts, cocoa and vanilla sugar, and the third with the rest of walnuts and raisins.

We knit the 3 rolls, put them in the tray, then grease with an egg.
If you don't have the gugelhupf tray, you can do the same as we did with the raisin-wrapped roll by filling the hole with foil, so that when it swells, the egg hole will remain.
Bake the cake in the preheated oven at 180 ° C for 50 minutes. After it browns, it would be good to cover it with a paper towel, so that it doesn't burn (after about 30 minutes, depending on the color you want it to have when it is baked).

Bread weaving patterns

Meanwhile, the dough is prepared from White Flour, following the same procedures as for the one with wholemeal flour. Leave it to rise, in a warm place away from the current. When both doughs have risen nicely, turn over a piece of work greased with a FINA film of oil: I split each répliqués in two, and I will use half of it for both the bread and the cake that is the subject of the present discussion. : in the following I will limit myself to the TECHNIQUE of braiding the coil (With images FROM MY kitchen A little too sunny, at that time). Divide both the dark and the white dough in half, and carefully shape 4 rolls about 40 cm long, as uniform as possible in thickness and with a smooth surface. They are placed on a working perpendicular to each other, as follows: Squeeze the rolls in the middle and twist two in pairs, in a counterclockwise direction clockwise: continue with the next row, this time clockwise: then again the other way around, and so on until the ends of the replica rolls are too short to be braided. Introduce the ends under the coil and press lightly. In the meantime I also modeled the bread and I placed them both on a PE from the Sea, covered with baking paper: I gave with a FINE peninsula the surface of the roll and the bread with warm WATER and I put them in the oven Off with a pot with hot WATER (you can preheat the oven to 40 degrees Celsius and grate afterwards), where I let them rise for another 45 minutes. Once they developed Frumos, I brushed the surface of the bread with beaten egg and sprinkled Susan: I danced the preheated oven at 200 degrees Celsius. Baking time varies depending on the oven, it should normally be ready in 35-40 minutes. The bread is ready when it has a nicely browned crust and if it is lightly hammered on the bottom, it sounds empty. And a section, STILL steaming, in which you can see the two ALE Colors of doughs with wholemeal flour and White: The bread came out sensational Hello! It is the only recipe I will make from now on.

Braided coil

Braided coil from: flour, water, yeast, salt, Mayan sugar.

  • 1 kg of white flour
  • 500 ml of water
  • 15-20 g of yeast
  • 1 teaspoon salt
  • 10 g sugar
  • 150 g old mayonnaise (or twice the amount of yeast)

Method of preparation:

In a heated bowl put half the amount of flour and yeast soaked in lukewarm water, old mayonnaise (or more yeast) and 1/3 cup water. Sprinkle the dough with flour, cover the bowl with a dry cloth and leave to rise for 1-1 / 2 & # 8211 2 hours.

After the dough has risen, add the rest of the flour and lukewarm water, in which you dissolved 2 tablespoons of sugar and a teaspoon of salt. Knead the dough again until it comes off your hands. Let it grow covered with a dry cloth for about 30 minutes, then turn it over on a plate sprinkled with flour and divide it into about 20 pieces.

You twist each piece of dough in your palms until you get a roll of about 35 cm. Join three pieces at one end and knit them together. Place them in a round pan, greased with oil and leave them to rise for about 25-30 minutes.

After they have risen, grease the cakes with water mixed with a little flour and bake for 20-25 minutes. When coils they are baked and are still hot, grease them with sweetened water to make them shine nicely.
