A simple, yet delicious potato pancake. Serve with a dollop of soured cream, if desired.

- 450g potatoes, unpeeled, scrubbed and cut into chunks
- 1 egg
- 1 small onion, quartered
- 2 tablespoons flour
- 1 tablespoon softened butter
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- 1 dash pepper

- Blend 3/4 of the potatoes in a food processor, using the steel blade. Add the onion, flour, butter, sugar, salt and pepper and blend until smooth.
- Grate the remaining potatoes and mix with the blended ingredients. Fry spoonfuls of the mixture on a hot, well-greased frying pan. Turning when the edges are brown.

Egg is mentioned in the ingredients but not the instructions; I made an assumption when to add it.The recipe directs you to cut all the potato up but it would have been easier to set 1 aside for the later mentioned grating.My food processor didn't chop the potatoes very well so maybe this adversely affected the taste but it felt too raw.-16 Feb 2017
