Tiramisu original recipe

In a bowl, rub the yolks with the sugar until they double in volume. Separately, beat the whipped cream. Whisk the egg whites with a pinch of salt.

Mix the mascarpone cream. Over the mascarpone add the Marsala wine, the yolks and mix until smooth, then add the whipped cream and mix vigorously for 2 minutes. Over the obtained composition add egg white foam and mix from bottom to top with a wooden spoon.

ASSEMBLY:

Because I wanted to give it a different shape, on a round plate, I placed a layer of biscuits soaked in the coffee solution with brandy, then I put cream, another layer of biscuits and then I placed soaked biscuits around the layers that they were on the plateau so as to create a fence. I tied the biscuits with a ribbon and then I continued assembling the cake with a layer of cream and biscuits, until the end, the last layer being cream.

Powder the top with cocoa and let it cool for at least 3 hours until serving
